Bulgar Wheat
  • Bulgar Wheat

Bulgur wheat, also known as cracked wheat, is a whole grain that has been partially cooked and then dried. It is made from durum wheat kernels that are first boiled, then dried, and finally crushed or ground into smaller pieces. This process gives bulgur wheat a unique texture and nutty flavor.

    • Nutritional profile: Bulgur wheat is a nutritious whole grain. It is an excellent source of dietary fiber, providing both soluble and insoluble fiber that can aid digestion and promote feelings of fullness. It also contains minerals such as manganese, magnesium, and iron, as well as vitamins like B vitamins and antioxidants.

    • Quick cooking time: One of the advantages of bulgur wheat is its relatively short cooking time compared to other whole grains. Since it has been partially cooked during processing, it only requires a brief soaking or cooking period before it becomes tender and ready to eat.

    • Versatile ingredient: Bulgur wheat's versatility allows it to be used in various dishes. It can be the main component of a salad, such as tabbouleh, where it is combined with fresh herbs, vegetables, and a tangy dressing. It can also be used as a nutritious side dish, a filling for stuffed vegetables or meat, or a base for grain bowls and pilafs.

    • Texture and flavor: Bulgur wheat has a pleasant chewy texture and a slightly nutty flavor. The texture can range from fine to coarse, depending on the size of the bulgur grains. Coarser bulgur retains more of its natural fiber and takes a little longer to cook.

    • Storage and shelf life: Bulgur wheat is typically sold in packages or bulk bins. It should be stored in a cool, dry place in an airtight container to maintain its freshness. Properly stored, it can have a shelf life of several months.

'Black hot sauce is a cultural necessity and you can taste our culture when that thing hits your tongue." -Hajia, Labadi- Ghana

Last year's December, we visited home, Ghana and we couldn't resist talking to some incredible food vendors who inculcate the black hot sauce in their food. It was an interesting experience as we had the august opportunity to have them tell us the benefits of black hot sauce and why everyone needs to include it in their diet.

This woman here, has been selling waakye for over a decade an she is well know in Labadi and its environs. Before moving to the USA, she was my Waakye "plug" and I felt my visit to Ghana wouldn't have been complete if I hadn't visited her store to eat waakye. The food still tasted the same and the Shito (black hot sauce) still gave me the "chills"- Rama
